Staff is a good bet for people who don't plan on going into the mechanics too far. Dual Sabers is the toughest to learn, since it's basically blue style with a bit more defense. Single hilt is the classic choice. Very adaptable. So long as you choose the right style for the right moment you have a high chance of victory.

Rinnegatamante would definitely be the best person to take a crack at this one. Jedi Knight II and Jedi Academy both run on id Tech 3 which is the same Engine that Return to Castle Wolfenstein uses which he already ported. Not saying it would be easy but some of Rinnegatamante's work on his RtCW port might be able to be used here.
Among the best to grace the PC is the Jedi Knight series, the last in its line being Raven's Jedi Academy. It may owe some of its longevity as a multiplayer staple to its engine, a heavily modified Quake 3 codebase, and it can definitely chalk up its still-active modding scene to that. hMML.
